There are 3 weapon slots, but I'm going as crossbow, would I still be able to use a sword, Crossbow and bolts, and a shield?

Yes, crossbow can be used on the fourth slot.

I see there is the ornate espada there, yet i cant get it. Do you have to craft it?

Yes, the Ornate Espada is a craftable sword. It's very good actually, and not too expensive.
The materials are 3 x Black Steel, 5 x Steel, 2 x Mixed Glue, 4 x Scrap Metal.
