Interesting idea. Once you have maximized your first second-tier, you can do a second one for example.
You could do any second-tier you want, and level them aswell, but this would make your improvements in the chosen professions less than someone who'd concentrate on only one.
Blacksmithing:
-Weaponsmithing (-bladesmithing (swords, axes) -tipsmithing (spears, poleaxes) -bluntsmithing? (maces, hammers))
-fletching (-bowmaking -crossbowmaking -arrowcrafting)
-shieldcrafting (-small shields (knightly heater, round shields) -large shields (board shield, heater shield, ...)
Armoursmithing:
-Leatherworking (-Leather -studded leather)
-Mailsmithing (-mail -transitional armours)
-platesmithing (-transitional -plate)
Note on armoursmithing:
to make for example an armour with both leather and mail parts, 2 armoursmiths whith leatherworking and mailsmithing would have to work together.

-Inventing (weird stuff)
-potioncrafting (consumables)
