I would say wooden for inside the castle. Maybe a few around the gate, make it look as if tables were ripped from inside the castle with the nord invaders being sighted. Maybe some work tables/apparatus around the buildings and stable. Make it look a bit like there's some panic going on, without it being too cluttered. Some freedom to move within the castle for cav players is desirable. Not to be cliché, but a lot of other maps have fire going on somewhere. As it is a seige, I guess some fire would be realistic. Maybe even some up ontop of the walls where the fefenders would have kept themselves warm/lit torches/arrows that kind of thing?
