Depending on how fancy you wanna get (or on the limits of game functionality) you could also add in a new crafting tree for something like a cavalry tactician. Could train/tame horses, craft lances and horse armour, craft cavalry fortifications like the cheval de frise that could damage/kill enemy mounts if they run over them.
